barley bowl recipe


Barley Bowl with Steakys

So again this is a meal made to fit my dietician's restrictions, but I recommend it for anyone cause its delish.

(serves5)
veggie stir fry:
-3 big celery sticks, chopped up
-4 cloves garlic minced
- 4shallots minced
-olive oil
fry these for a bit then add
 chop bite sized
- 1red pepper
- 1 yellow squash
- 1 zucchini (kinda small)
- fresh thyme, no twigs
- cracked pepper
cook til aldente, turn off heat and toss on
- 4scallions chopped up

carb:
-1cup Barley
-3cups water
bring to a boil, simmer covered 45min
(serve 1/2c per person)

Steaky
(serves 4)
2lb 'peppersteak' think steak cutlets
-chop 1 onion
-olive oil
-brown the meat on both sides and remove from skillet onto side dish til all are browned and rare/med
(take out the onions before they burn)
- toss a box of prechopped clean white mushrooms into the dirty steak pan and use them to rub the steak drippings off the pan bottom with a wooden spoon, juice and oil becomes a gravy for the shrooms.
- toss the steaks n onions back in the mushroom pan to heat up before serving

^vegetarians can just double up on the veggie stir fry and pass on the steaky :)
